Bean Yogurt Parfait

This refreshingly delicious parfait is wonderful for breakfast, brunch or even dessert. You’ll enjoy a symphony of textures - smooth and creamy yogurt complemented by crunchy nuts, chewy apricots and a burst of juice from each pomegranate seed.
Ingredients
1 quart yogurt (any kind you prefer)
1 vanilla bean
1 cup dried apricots, sliced thinly
1 cup toasted pistachios
1 cup pomegranate seeds
Honey, to serve
Instructions
Split vanilla bean lengthwise, and scrape the seeds using the back of your knife. Mix vanilla bean into the yogurt until just combined.
Using parfait glasses, start with apricots, pistachios, and pomegranate seeds, then top with yogurt. Repeat to create a few layers.
Finish with dry ingredients and top with more pomegranate seeds.
